It's an action camera, so avoid the "cinematic" settings and ignore things like the 180-degree shutter angle rule. These will NOT give you the best results. Ideally your shutter will be 1/240 or faster to get the best results.

Hi folks. I purchased my GoPro Hero 7 Black in October and have been struggling to get that sweet spot with my audio recordings. I have enabled ProTune Audio to save the raw audio
If you really want to use a gopro instead of a DSLR for this, then use lower framerate as possible and disable hypersmooth. I think it would also help to set EV -1.0 in protune, but not sure. If you put the GoPro on tripod or stable position (not handheld), set max iso to 800.
